Krill liquid

This liquid hydrolysate is made from Antarctic Krill (Euphausia superba).

Antarctic krill is mainly fished for the extraction of its oil and is used in the feed industry. As raw krill is a rapidly deteriorating ingredient, it is processed on a production line set up on board fishing vessels. The meat is separated from the high chitin content parts by enzymatic hydrolysis. The resulting hydrolysate is rich in free amino acids, peptides, and polypeptides and is almost entirely digestible. 64% of it has a molecular weight below 500 Daltons. It is a product with a particularly strong odor (say the word – smelly).
